So, it'been a while but I just got the 351 w back from the shop and I'm thinking about the torque convertor. The motor is now at 8.5 compression stock crank, 4 barrel with headers and dual exhaust. Ported stock heads. Any suggestions?

It's an edelbrock claims from idle to 4000 rpm.

I'd drive it with the stock converter first, if it 'leaves like a bus', maybe a 2000 stall

but an idle >4k cam probably won't need a converter

Ohhhh...

I always default to 351C Wacko

2.75 / 3.00 you may not be a tire fryer off the line, 3.25 / 3.50 will add some snap at the expense of fuel economy
