I looked it up in the factory service manual for you.  There is no specification on the oil quantity.  It just states to drain the ooil and measure how much was removed.  There is also a procedure to fabricate a dip stick to check the oil level in the compressor.

Are you running r12 or 134. I believe they call for different oil. When I filled mine it specified how much and which oil. I'll look for the directions tomorrow. I believe it is a York compressor

did the York / Tecumseh compressors keep an oil level in the compressor crankcase and also use a circulating oil charge in the refrigerant?

or just in the crankcase, or just in the refrigerant?

is there a fill / level plug?

Definitely different oils for use with different refrigerants. R12 use 525 mineral oil, for 134a use PAG 100 oil(recommended for use in York or Tecumseh style compressor). Oil capacity depends on a few factors, refrigerant type and if it's a partial or total refill. R12 system would use around a total of 8 to 9oz of 525 oil and 4lbs +/- refrigerant, 134a would be a bit less for both oil/refrigerant. I would recommend keeping the STV/POA valve and adjust it if using 134a, the York/Tecumseh style of compressor clutch does not like the type of cycling newer vehicle A/C systems employ. Just an FYI.
