That Official Coil Spring thread is a bit.....overwhelming, to say the least. Got my 2 door Montego sorted out, but what are the favorites for the rear coils and shocks on the wagon? I won't be towing or haul heavy loads, so are variable still the best on these cars, or would constant rate be better?

 A pair of Moog Cargo Coils for the 72-76 Coupe will work just fine.

If you are just looking for stock type springs, Moog CC803's are the only springs listed by Moog for your car.  They are variable rate, unlike stock, but I don't believe there are any other springs listed for 1972 Torino wagons in the aftermarket.
 
For shocks, KYB or Monroe Severe Service shocks are good choices if you want to get ride of the float.  Bilstiens are probably the best, but they are quite a bit more money.
