I think I would like to get rid of the stock air cleaner assembly and just put a nice filter with chrome top on the carb. Any recommendations? What about dealing with the hoses that go to the old assembly, CCV, vac line for cold air door, etc?

I think it looks a little cluttered and I would like to see more of the intake. Clean it up a bit.

if you want to sell that stock air cleaner, shoot me a pm. as far as the old vac lines, most of those open element air cleaners have a plug for the valve cover breather and the small vac lines can be plugged.
