Have a 1968 formal roof torino with C80E-F heads. Last time I used the stock gasket but now i see that there are many other options. I don't mind paying about $100 a pair. is this realistic for decent performance? Any suggestions?

A stock head gasket should be fine for a stock compression engine that you aren't going to throttle too much. If you going to raise the compression ratio or start entering burnout contest then you should probably upgrade.

brand doesn't really matter, what matter is the material and thickness
