So I wanted to officially say thanks to everyone that posted their tire sizes in this thread. Without the help, big mistakes probably would have been inevitable. however, with the help I was able to determine the sizes I needed for front and back and ended up with
245/60/15s on 15x7 rims with a 3.75 backspace on the front
275/60/15s on 15x8 rims with a 4.50 backspace on the rear

Thanks! I can't wait to get the body done, but the main concern is getting her driving well. Now that I'm happy with my tire/rim choice, it's time to do some suspension work and lower it

yeah, I'm pretty sure I'm gonna drop her an inch all around. I'll be testing it on old springs to see how I like it.

Have you had your car information registered with the Montego GT Registry yet?

+1, love the looks as it sits now.  Very nice looking ride. 
 
There is a ton of information in the technical section on coil springs including stance photos.  Most of it is for '72-73 Torinos, but your car is pretty much identical underneath to a '72 GTS so it should have the same stance as a '72 GTS with the same springs.

The more I look at it the more I wanna keep it as she sits.
I've been looking at the coilspring thread and believe I got the info I need. If need be, I can always cut the new springs to match this stance
