Thought I'd ask a (maybe obvious) question. Has someone removed the choke horn thing, why would you do this, and it it a thing to do for some reason?

Smoother airflow into the carb, usually for a competition engine.

the only good reason to remove the choke tower is if there is such little hood clearance that such a low profile air cleaner is needed and the lid would restrict air from getting into the carb ... otherwise it's just another errant & detrimental modification

best power is made when the air is directed straight downward through the carb, air does not like to turn 90* for no good reason. carbs work best with linear air flow, non-linear air flow just causes a big mess over the air bleeds and venturi booster clusters. Big Swirling Mess if that conjures up a visual.

straight flowing air is Nice, turning air is a Big Swirling Mess

we know this from the air filter shoot-out, a salad bowl and a velocity stack won!
take the filter off the salad bowl and what would happen?

Looks like there has been some butchery going on then.
Will get it set up and looked at this year at some point,, if not just to reduce the fuel comsumption!

Holley carbs are said to be 'a calibrated fuel leak' but the Holley style do make the best power Big smile

It does look related there! It works, very well too judging by the way it pulls, but the fumes from the exhaust are eye stingingly bad. Going to look at a few things.
Drop the fuel pressure a bit, and check the dizzy vacuum. 
Leaking power valve has been mentioned too.

and he had the kickdown cable routed to under the dash so he could pull it himself,

it would bark Desert Duelers on the highway

Not sure what dust and debris you have on your roads, but one thing I see on those conversions is they forget to seal up the little hole where the choke linkage passes through into the air horn area.  On passenger side and kinda in line with the front barrels. I drive on lots of dirt/gravel so I am always watching for where dirt can enter my engines.  Cannot see on your pic if it is blocked, but on Rocks pic the hole is open.

i have a custom 830 that has a chunk of brass stock wedged into the plastic slider retainer fingers,


it's about the same size as the plastic slider but just thick enough to be driven in
