Dumb question...
Why not use factory relays, and power up with temp sensors that are powered only when the key is on, like the OEM systems?

Factory systems don't use simple relays, and they almost all use OEM controllers that are part of other electronics. Plus the points where they activate is usually not what you want, not adjustable, and requires other components. I would call those better choices than simple relays people use to install fans.

Good question!
   Well for my situation I have many reasons. 1) My temp sensors aren't designed as a "trigger" source. 2) I wanted to be able to manually adjust on/off temps(I do realize once the controllers on/off temps are set to my liking I wouldn't do any more adjusting, but the option is still there) and I tried to find 2 different sensors that were 3/8" NPT and had settings that were about 10-15 degrees apart (I.E. larger fan on @ 185 & off @ 175, smaller fan on @ 200 & off @ 190.)  3) I actually do use factory relays, but aftermarket relays with a higher amperage rating is a plus. 4) My ride didn't come with dual electric cooling fans. 5) Most "decently" sized electric cooling fan's circuits are controlled through the PCM or other computer control system, I really don't want anymore wiring/circuit complexity than I already have. 6) Most cooling fan systems/circuits won't handle a Mark VIII fan's amperage needs.
