I got a 74 gran torino and I'm trying to figure out what the compression will work out to be with aftermarket heads but I have no idea what the dome volume is or what the compressed gasket thickness would be. Any help?

Summit will have the gasket thickness listed.  The head manufacturer should list the chamber volume in cc's. 
Isn't dome volume for the pistons?  I could be wrong.

what engine? 1974 pistons will be dished, and you'll also need the chamber volume

we still need to know what engine this is before anyone can help you out...
 
if it's a 351C with dished pistons you're looking at 8cc's
 
if it's a 400 with dished pistons your looking at 16cc's 
 
I don't have numbers handy for 302 or 351W
