As I understand it, 70/71 rancheros and Torinos are identical to the firewall. So my question is can I swap the entire braking, steering and manual transmission setup between the two without much drama?

Yes, those parts will all interchange. The Ranchero has a different wheelbase but other than the brake lines it won't effect any of the other parts
