Upgrading a 1970 Torino 302's carb & intake?

Hey all - 

First post here. Seems like a nice, cozy forum so far. :)

I'm posting because I've been having a problem with my 1970 Torino where the engine just cuts out and dies. No sputtering. No dieseling. It just cuts out. My mechanic says that the engine is staved for fuel, which makes sense because it's got the original carb and gas tank (400,000 miles later) and who knows what kind of crud is sloshing around in there.

The way I see it I have a couple of options:

1. get the carb rebuilt and ungunked and flush the fuel system
2. buy a replacement 2-barrel carb and a new fuel tank
3. buy a new upgraded 4-barrel carb and dual-plane manifold and a new fuel tank

The way I see it, option three is the way to go: I'm planning on adding power upgrades over time to the 302 to give it more pep (stuff like long tube headers, new heads, new cam, etc) so why not start now with a new manifold and a 4-barrel carb?

I've read that a 500cfm carb is the sweet spot for an unmodified 302, but if I'm planning to upgrade headers, heads and cam, would a 600 be a better fit?

Is my whole approach dumb and missing something I haven't considered?
